Jellyfish is an essentially Chinese food item. The Chinese consider it as a delicacy and they think of various innovative ways to cook this fish to make it edible. These Jellyfish dishes are usually served in Chinese restaurants as starters or appetizers. There are a variety of Jellyfish but the best variety is those found along the Southern coast of the Asian countries like China, Japan and Korea. Before preparing Jellyfish is essential to know how it is usually preserved. The best method to preserve Jellyfish is to rub in salt and alum. The first thing to note about Jellyfish is that it cannot be cooked as soon as it is purchased. It is required to be soaked in water overnight. Then next day again it may be re-soaked in fresh water. Finally it is to be rolled up and shred in to pieces. These shredded pieces need to be dropped in to hot boiling water. But care should be taken not to leave the pieces for a longer time. Now immediately the shredded pieces need to be transferred in to a pan of cold water. In a pan, add olive oil and when it is hot, add the garlic pieces chopped, ginger juliennes and the green chillies. Now when the ginger, garlic and chillies are sauteed properly, add the potato cubes. Also add 1 cup of chicken or fish stock to this mixture. Now the pan is covered and left to simmer on low fire. When the potatoes are half done, the Jellyfish shreds may be added in to the pan. After thorough mixing and adding enough salt, the pan is again covered and allowed to simmer on low fire. Finally after the stock reduces to about half the quantity, the potatoes and Jellyfish are done. The Jellyfish stew is ready to be served and can be used with rice or bread.
