Jellyfish Burgers

The following ingredients will serve for four people. You will need 125g of ready jellyfish. You will need 500gg of potatoes, 75g of butter, salt and pepper, 3tsp's of toasted sesame oil and sliced spring onions. You will also need 1tsp of ginger, 2 coriander leaves chopped, 2tsp of sweet chilli sauce, and vegetable oil.
The first step is to drain the jellyfish out of all its water, make the jellyfish all dry. Then chop the jellyfish into thin slices and let them dry as much as you can on a cloth or table. Now while that is drying, get started on your mash potatoes. Peel them, cut them into chunks and place them into boiling water and let them boil for about fifteen minutes. Drain the potatoes and mash them, adding butter, salt and pepper. Next, in a bowl mix your toasted sesame oil, ginger, coriander, sweet chilli dipping sauce, spring onions together. Now in one bowl add half of the herb mixture with the mash potatoes. In another bowl, add the other half of the herb mixture to your chopped jellyfish. Now to make the burgers, make a round disk out of the mash potatoes and place down.
Add a smaller portion of the jellyfish in the middle and another disk out of the mash potatoes on top. And close the sides down to make a burger with jellyfish inside! Now you are ready to fry them in a pan, two minutes each side. After frying, serve them with salad and sweet chilli sauce.
