Chicken and Jellyfish Stirfry

RECIPE INGREDIENTS
- 3 cups (750 ml) deep frying vegetable oil
- (1/4 teaspoon) chopped ginger
- (1/4 teaspoon) shredded scallions
- Chicken breast piece (200 g)
- Rice wine (1 teaspoon)
- Lightly beaten egg (1 teaspoon)
- Salt (1/4 teaspoon)
- Corn starch, dissolved in 2 teaspoon water.
- Sesame oil (2 teaspoon)
- MSG (optional)- (1/2 teaspoon)
- Let the jellyfish stay soaked in cold water for about three hours. After this remove, wash and cut into 5cm x 3cm (2 x 1 inch) pieces. Plunge the pieces in water that is boiling, remove them immediately and let the water drip off. Set it aside.
- Remove the skin, tendons and fat from the chicken. Slice the chicken into horizontal stripes of about 1 inch wide. Then, put the slices together and shred them by cutting along the grain. Mix them with corn starch and the egg white and and set aside.
- Over high heat, place the mix. Pour the oil and heat to 1500 F (Warm) and immediately add the shreds you had cut. Let these mix gently (you can stir a little bit) until the shreds separate then remove them. Drain properly and set aside.
- Pour the oil from the mix, making sure to leave only enough to cover the bottom. Heat the pan, add the scallions and stir. Then, add the chicken and jellyfish, followed by the salt, rice wine, and ginger. At this point you can add the MSG which is optional. Fry them as you are stirring for about 30 seconds.
- Sprinkle sesame oil on the dish and and serve it hot.
